An imu is a traditional Hawaiian underground oven used to slow-cook food, most famously kalua pig, using the heat from rocks and the moisture from banana and ti leaves. The process involves digging a pit, heating rocks in a fire, and then layering the food wrapped in leaves, which is sealed with a tarp and soil to cook with steam for several hours. It is a significant part of Hawaiian culture and cuisine, often featured in luaus.  

Your pan doesnʻt have to have a turkey in it. Some of our members fill their pans with lau lau, a ham, and even vegetable roots. The imu is perfect for a turkey for your Thanksgiving meal. It will be the most moist turkey meal you have ever served.
